Tasty, easy and useful Slim cuisine: Arugula with feta and blueberries
In the summer, we crave fresh, crunchy greens and a boost of energy. So bring on the arugula with feta and blueberries.
Ingredients for 2 servings:
4 handfuls of arugula
1 handful of blueberries
2 tablespoons of herbs (parsley, chives, chervil, tarragon)
1 small package of feta
1 tablespoon of balsamic vinegar
1 teaspoon of lemon juice
0.5 teaspoon of orange juice
Salt, 1 pinch of freshly ground pepper
3 tablespoons of olive oil
Approximately per serving:
20 grams of fat
14 grams of carbohydrates
14 grams of protein
And here’s how it’s done:
Sort the arugula, wash and dry in a salad bowl. Place the blueberries in a bowl of cold water. After 2-3 minutes, remove and dry thoroughly. Remove the feta from the packaging and cut into small cubes. Place the arugula, blueberries and feta in a pretty salad bowl.
Peel the shallots and cut them into small cubes. Pour into a small bowl. Whisk together the balsamic vinegar, lemon juice, orange juice, salt, and pepper. Now add the olive oil. Stir until the salt crystals dissolve. Put in a salad, mix the salad with the dressing and serve. Enjoy a crunchy snack!
