Carrots in the oven with cashew nuts – a vegan recipe

Baked vegan carrots with cashews
- Preparation: about 10 minutes
- Cooking/baking time: about 40 minutes
- Crowd: 4 servings

1 kg
carrots
-
2 tbsp
olive oil
-
2 teaspoons
Maple syrup
-
2 teaspoons
Apple cider vinegar
-
1 pinch(es)
salt
-
1 pinch(es)
pepper
-
1 pinch(es)
cumin powder

100 g
cashew nuts
-
1 handful
fresh parsley

Wash the carrots thoroughly and cut off the ends. There is no need to peel them.

Mix olive oil with maple syrup, apple cider vinegar and spices.

In a bowl, evenly mix the carrots with the marinade. Then put them on a baking sheet. They should have enough space so that they do not overlap.

Put the carrots in an oven heated to 180 degrees for 35-40 minutes, until they turn brown.

Meanwhile, coarsely chop the cashews and place in the oven for the last five minutes.

Now you can serve carrots in the oven sprinkled with fresh parsley.
