This incredible Brussels Sprout Rice Casserole is easy to make, but tastes delicious! Read here how you can prepare this heavenly dish with just a few ingredients.

Ingredients for 4 servings:

  • 500 g of chicken breast fillet
  • 1 sweet potato
  • 200 grams of Brussels sprouts
  • 1 bulb
  • 2 cloves of garlic
  • 2 chili peppers
  • 3 tablespoons of olive oil
  • 250 g of long-grain rice
  • 300 ml of vegetable broth
  • 1 bay leaf
  • a little salt and pepper
  • 1/2 teaspoon cumin
  • 5 tablespoons of peeled almonds

Approximately per serving:

  • 668 calories
  • 22 grams of fat
  • 70 grams of carbohydrates
  • 34 grams of protein

Preparation time:

  • 25 minutes (plus 20 minutes of cooking)

And here’s how it’s done:


  1. Wash, trim and cut the chicken breast fillet into small pieces. Peel and cut the sweet potatoes into cubes (about 1 cm). Wash the cabbage and cut it in half. Then peel the onion and garlic and finely chop together with the chili pepper.
  2. Heat the olive oil in a pan and fry the chicken, potatoes, Brussels sprouts, onion, garlic and chilli. When the chicken is cooked, transfer everything to a bowl and set aside. Now add the rice to the pan with the vegetable broth and cook for ten minutes.
  3. Then add all the other ingredients except the almonds and continue to simmer until the rice is cooked. Remove the bay leaf and add the flaked almonds. Serve warm and enjoy. Bon appetit!
