Peel the onion, cut it in half and into small half rings. Melt the butter in a saucepan. Now put the onion in butter and mix with 1 tablespoon of flour. Chop the garlic, add and fry for 15 minutes.
Now deglaze with white wine and add honey. Simmer over high heat until the wine is almost gone. Pour in the broth, add a sprig of rosemary and simmer for another 15 minutes. Season to taste with pepper, salt and nutmeg.
Meanwhile, salt and pepper the chicken breasts. Heat a little oil in a pan and fry the fillet on all sides. Remove from pan and top with pieces of Gruyère.
Preheat the oven to 180 degrees upper/lower heat. Place the sauteed onions in a heatproof dish and place the chicken breasts on top of the onions. Bake in the oven for about 20-30 minutes, until the cheese is golden and the chicken breasts are cooked through. Serve with rice or spaetzle and a fresh green salad.
