Satisfying and healing: our chicken soup that will really warm you up when you have a cold.

When coughs and runny noses make life difficult, there’s nothing better than freshly made chicken broth. We will tell you a very simple recipe that will help you fight off a cold and get back on your feet quickly.

Ingredients for 8 servings:

  • 1 small soup chicken
  • 1 bunch of soup greens
  • 1 bulb
  • 2 bay leaves
  • 4 peas of pepper
  • 2 carrots
  • 200 g noodles (for example, mussel noodles)
  • Salt pepper
  • Fresh parsley

Preparation time:

  • 30 minutes (plus 2 hours of cooking)

And here’s how it’s done:

  1. Thoroughly wash the soup chicken and cut off the tail (root of the tail). Then place the chicken in a large pot and add enough water to cover the chicken. Salt well and bring to a boil. In between, remove the foam from the soup with a slotted spoon.
  2. Clean the soup greens and peel if necessary, then cut into cubes of about one cm and add to the soup. Add peeled, quartered onion, bay leaf and peppercorns. Cover the pot halfway with a lid and let the broth simmer over low heat for two hours.
  3. After this time, remove the chicken from the pan, clean the meat from the bones and cut it into small pieces. Rub all the soup through a sieve and pour the broth back into the pan, then increase the heat. Add the peeled carrots, cut into 1 cm thick circles. Cook for five minutes, then add the noodles. Let it cook until the pasta is al dente.
  4. Season the chicken soup with salt, pepper and fresh parsley – ready!
