Fresh for the soul Crisp cucumber salad with peas and radish
We are real fans of salads, and that’s why today we present you with another delicious recipe with good vegetables. You will definitely taste it!
Ingredients for 2 servings:
For the salad:
50 g of snow peas
1/2 bunch of radish
chives and onions
fresh herbs of your choice (optional, for garnish)
2 tablespoons of sesame oil (or olive oil)
1-2 tablespoons of white wine vinegar
1 tablespoon of water
apple juice (optional)
Approximately per serving:
10 grams of fat
10 grams of carbohydrates
3 grams of protein
And here’s how it’s done:
Bring a pot of salted water to a boil. Blanch the sugar snap peas for a minute, drain, shock with ice water and drain.
Wash the cucumber well, dry it and cut it into thirds. Thinly slice or grate the thirds lengthwise.
Wash the radish, clean it from the greens and cut the tubers.
Wash the onion, dry it and cut it into rings. Then mix the vegetables and chives in a salad bowl.
For the dressing, whisk oil, vinegar and water, season with salt and pepper. If necessary, sweeten with a little apple juice. Then pour over the salad and mix well again. Garnish with fresh herbs of your choice.
