Welcome chicken soup with fresh coriander
So simple, yet so delicious: our Vital Chicken Soup with Fresh Coriander! Try the classics.
And here’s how it’s done
- Carrots, parsley roots and parsnips should be peeled, washed, cleaned and cut into small pieces. Wash, cut and cut the leek into rings. Peel the onion and cut it into small cubes. Clean the royal mushrooms and cut them into slices. Wash the chili pepper, cut it lengthwise, remove all but 3-4 seeds. Cut the pod into thin strips. Wash the chicken or pullard.
- Briefly fry the onion and chilli in a large pot in the hot oil. Add the chicken and cover with cold water until well covered. Bring to a boil, skimming the foam that forms on the surface with a spoon.
- Season the soup with a little salt and pepper, simmer for about 1 hour (chicken soup about 45 minutes longer, extra large soup chicken a little longer so that the meat becomes tender). Add prepared vegetables and mushrooms to the soup, stew for another 30 minutes. Remove the chicken or puller and remove the skin and bones. Cut the meat into cubes and let it warm up in the soup. Season with salt and pepper. Wash the coriander, remove the leaves and sprinkle over the soup. Serve.
