Ingredients for chicken:
Peel a chicken (if possible, of the appropriate type) and cut into pieces. To do this, separate the legs and wings from the torso. Spread your legs twice in the joint. Divide the torso in half lengthwise. Divide the chest area with bones again into 3-4 parts. Divide another area as well.
If you do not want to use ready-made broth, then you can ideally use a lean part of the body to prepare fresh broth. To do this, put vegetables, onions and chicken fillet in a saucepan, add herbs and spices. Pour in the water until the ingredients are covered. Bring everything to a boil, then reduce the heat and cover the pan with a lid. Let the broth simmer for at least 1.5 hours.
For the lemon chicken, heat the olive oil in a saucepan, fry the remaining chicken pieces on all sides and season with salt and pepper. Meanwhile, peel and cut the shallots in half. Also cut the young garlic in half. Alternatively, you can use 4 cloves of garlic. Peel a squash, grate it and cut it into thin slices. Peel the tomatoes and cut the flesh into slices. Wash the lemons well and cut into quarters.
Fry the shallots, garlic and ginger, then add the broth. Chicken pieces should be about two-thirds immersed in the liquid. Add lemons and season with chili, a little salt and pepper. Reduce heat and cover the pan with a lid. Stew the chicken for about 45 minutes. After about 30 minutes, add the tomatoes.
Peel and slice the mushrooms. Heat the olive oil in a frying pan and fry the mushrooms on it. Reduce heat slightly and cook mushrooms until cooked. In the last few minutes, add a little salt and sugar. Add the mushrooms to the chicken just before serving.
Ingredients for carrots:
For garnish, peel the carrots and cut into slices or slices. Boil in slightly salted water for a few minutes. Carrots should still be al dente. Drain and extinguish with cold water.
Heat butter in a frying pan and fry carrots on it. Season with a little salt, pepper and sugar.
Put chicken pieces on plates with sauce and mushrooms and serve with carrots. Baguette, potatoes and other side dishes can be served to taste.
