Chop the onion and fry in a pan with raw cane sugar and allow to caramelize slightly. Then remove from the mold and let cool a little.

Cut the chicken breast fillet into strips and place in a large saucepan. Peel the ginger, garlic and onion and cut into small cubes.

Mix the sauce from soy sauce, honey, sherry and a little pepper. Add onion, garlic and finely chopped ginger. Pour the sauce over the meat.

Let everything boil over low heat for about 20-30 minutes. Then remove the meat, dissolve the starch in a small amount of cold water and add to the sauce, mix well and boil again briefly until the sauce thickens. Put the meat back in the pot and mix well.

Serve the teriyaki chicken with sesame seeds, sesame oil and scallions. Tip: Basmati rice or crispy wok vegetables are great as a side dish.

What does teriyaki mean?
“Teriyaki” comes from the Japanese language and consists of two words: Japanese word ter means shine and word which means grill. In Japanese cuisine, this term means a method of cooking fish, meat and vegetables in a special teriyaki sauce.
Classic teriyaki sauce is made by mixing equal parts soy sauce, rice wine, and sugar and reducing to about half the original volume over low heat. Depending on the type of marinade, different rice wines are used, and in Western cuisine dry sherry is used as an alternative, and honey is used instead of sugar.
